    BrewPi is up and rolling for this one



    Going to ferment at 68 for 4 days, ramp to 78 over the next 7, then hold at 78 for the remainder of 6 weeks

    brewing up a double batch of a pale sour today.

    14# NW Pale Malt
    7# Wheat Malt
    1# 40L

    Built up a 2L starter of lactobacillus delbrueckii and lactobacillus brevis, going to kettle-sour it overnight. Tomorrow will finish it off with some hops and then ferment it with something neutral.

    Picked up some fresh apricots and cherries yesterday. Brewed a double batch of a pale sour base, going to put apricots on one half, cherries on one quarter, and leave the other quarter straight.

    so, the lesson here is never use White Labs 'pure' bacteria strains. They are not. Can't tell that this beer was supposed to be sour at all, the pitches I used had to have sacc contamination

    That was a blend to start with, so it intentionally had sacc and bacteria.

    Doing an experiment today, starting with a double batch of my Session IPA

    15# NW Pale Malt
    .5# Victory Malt
    1# Crystal 40L
    1.5# Malted Wheat
    .5# Flaked Wheat

    Then, starting a 60 minute boil and...

    1oz Columbus @ 50
    1oz Magnum @ 50
    Bring below 200 and pause @ 45
    draw off 5.5 gal wort, to be lagered
    Resume boil
    2oz Amarillo @ 2min
    1oz Palisade @ 0min

    2nd half will be fermented as normal w/ Imperial Flagship at room temp

    I admire the work and dedication to the craft you all have but to me beer and wine are both nogo's. I just can't get used to the bitterness.

    Sounds to me like you should give both beverages another look. There are many styles of both that have no noticeable bittering, at all.
